Ingredients
To embark on this delectable journey, let's gather the ingredients that will bring the flavors of the Dominican Republic into your kitchen:

2 cups of red kidney beans, soaked overnight
4 cups of water
1 cinnamon stick
2 cups of coconut milk
1 cup of evaporated milk
1 cup of sweetened condensed milk
1 cup of coconut cream
1 cup of cooked sweet potatoes, mashed
1 cup of raisins
1 teaspoon of vanilla extract
1/2 teaspoon of ground cinnamon
1/4 teaspoon of ground nutmeg
A pinch of salt


Step by Step

  • Place the soaked kidney beans, water, and cinnamon stick in a large pot. Bring it to a boil, then lower the heat and let it simmer for 1 to 1.5 hours until the beans are tender. Drain and set aside.

 

  • In a blender, combine the cooked beans, coconut milk, evaporated milk, sweetened condensed milk, coconut cream, mashed sweet potatoes, raisins, vanilla extract, ground cinnamon, ground nutmeg, and a pinch of salt. Blend until you achieve a smooth and creamy consistency.

 

  • Pour this delectable mixture back into the pot and cook it over low heat for about 15-20 minutes, stirring occasionally to prevent sticking. The mixture should thicken slightly.

 

  • Once cooked, remove the pot from the heat and let the Habichuelas con Dulce cool to room temperature. Then, transfer it to the refrigerator and let it chill for at least 2 hours until it reaches the perfect level of coolness.

  • Before serving,  if  desired, add a pack of Guarina milk cookies, or  garnish with a sprinkle of ground cinnamon and a few raisins, adding a touch of visual appeal to this luscious creation.
